Usually, pistachios are seen as a quick and healthy snack or as just another addition to a trail mix. However, pistachios can elevate your meals by providing a satisfying crunch. Whether you’re looking to boost your post-workout recovery or create nutrient-dense dishes, these versatile nuts can be incorporated into a variety of recipes.
Chef Neha Deepak Shah has shared two high-protein recipes using pistachios for breakfast on behalf of American Pistachio Growers. These recipes are not just delicious but also nutritious.
Green Pesto Pasta
Ingredients
- 100 g pasta of your choice
- Pasta water
- Cheese and chopped pistachio for garnish
For Pesto Sauce
- 1 big bowl of spinach
- 1/2 cup broccoli
- 1/2 cup pistachios
- 100 g paneer
- Salt, pepper & chilli flakes
- Milk for blending
- 2 tsp butter
- 5 to 7 cloves of garlic
Method
- Step 1: Cook the pasta to al dente texture only & save the water to add to the final pasta
- Step 2: For the base of the green pasta, blanch spinach and broccoli separately.
- Step 3: Add pistachios, paneer, blanched spinach and broccoli, and milk in a blender and grind it till it becomes saucy. You can add tofu as well if you want, or you can skip it. Now, the sauce is ready.
- Step 4: Add some butter to the heated pan.
- Step 5: Add lots of garlic and the green sauce to it.
- Step 6: Add boiled pasta to it.
- Step 7:Add the leftover boiled pasta water and mix it well.
- Step 8:You can keep the pasta a little saucy, as the pasta will absorb the sauce.
- Step 9:Cook the pasta for 2-3 minutes.
- Step 10: Garnish it with cheese and chopped pistachio. Now enjoy!
Pistachio Butter
Ingredients
- 1 cup pistachio
- 1/3 cup chopped white chocolate
- 1 tbsp oil (you can skip it, but then you will need a little more pistachio to make it easy to grind in the mixer)
Method
- Step 1: Once you remove the skin of the pistachio, dry it completely.
- Step 2: Blend it till it is smooth and buttery. Do not add any water; the natural fats of the pistachio will do all the magic.
